Roasted Carrots with Cumin and Paprika Recipe

Zanahorias Asadas con Comino y Pimentón, or Roasted Carrots with Cumin and Paprika is a delicious and easy to prepare Spanish vegetarian tapas.

To prepare this tapas dish, you need carrots, garlic, cumin, extra virgin olive oil, smoked Spanish paprika as well as salt and pepper.

You first need to wash and peel the carrots and cut them into thin rounds.

Then add the carrot rounds to a large bowl together with the garlic (skin on).

Afterward, add four tablespoons of extra virgin olive oil, one tablespoon of cumin, 1 teaspoon of smoked Spanish paprika, and salt & pepper.

Mix everything well.

Put the mixture on a baking sheet and roast for around half an hour at 220°C (424°F) in the oven. Stir after 15 minutes.

  • 1/2 kilo (around 1 pound) of carrots
  • 1 tablespoon of cumin
  • 1 head of garlic
  • 1 teaspoon of smoked Spanish paprika
  • 4 tablespoons of extra virgin olive oil
  • Salt and pepper

Instructions

    1. Wash and peel the carrots and cut them into thin rounds. Then add them to a large bowl.
    2. Separate the cloves of the garlic and add them with the skin to the bowl.
    3. Add four tablespoons of extra virgin olive oil to the bowl as well as one tablespoon of cumin, 1 teaspoon of smoked Spanish paprika, and salt & pepper.

@Rich, add 1 teaspoon of smoked Spanish paprika together with olive oil, cumin, salt & pepper. I just updated the recipe!

@Megan, I'm sorry. I indeed forgot to add it to the recipe. Add 1 teaspoon of smoked Spanish paprika together with the olive oil, cumin, salt & pepper.
