  • 1 eggplant
  • Milk
  • Honey
  • Sea salt
  • Pepper
  • Flour
  • Extra Virgin Olive Oil

Instructions

  1. Cut the eggplant in around 1 cm or 0.4 inches thick slices.
  2. Put the eggplant slices in a bowl and cover them with milk for at least one hour. Add a pinch of salt. This step is important to draw out the bitterness of the eggplants.
  3. After one hour drain the eggplant slices and coat them in flour. Optional: Add salt and pepper to the flour and mix.
