C\u00f3rdoba se encuentra en la regi\u00f3n de Andaluc\u00eda, situada en el sur de Espa\u00f1a.<\/p>\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Historia_del_Salmorejo\"><\/span>Historia del Salmorejo<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n<p>La historia del Salmorejo se remonta a cuando el Imperio Romano invadi\u00f3 Espa\u00f1a. Una bebida que los soldados romanos llamaban posca podr\u00eda considerarse como el antecedente de la sopa de salmorejo. La posca se elaboraba con lo que era f\u00e1cil de conseguir entonces, es decir, sal, agua, vinagre y algunas hierbas.  <\/p>\n\n<p>A\u00f1ade unos cuantos ingredientes m\u00e1s a la antigua bebida romana y tendr\u00e1s una comida barata pero saciante. El ajo, la sal, el pan, el vinagre y el aceite se mezclaban con un mortero para crear algo as\u00ed como la primera versi\u00f3n de la sopa de salmorejo. A juzgar por esta lista de ingredientes, la sopa era probablemente blanca.<\/p>\n\n<p>Todo cambi\u00f3 cuando Crist\u00f3bal Col\u00f3n lleg\u00f3 a suelo espa\u00f1ol, con un fruto llamado tomate. Este alimento de color rojo brillante, cuando se a\u00f1ade a la mezcla de la sopa, le da el color rojo caracter\u00edstico y el sabor fresco que hoy conocemos y disfrutamos.<\/p>\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Consejos_para_preparar_un_autentico_salmorejo\"><\/span>Consejos para preparar un aut\u00e9ntico salmorejo<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n<ul class=\"wp-block-list\"><li>Elige tomates maduros de primera calidad, porque es importante crear una base fresca y rica para tu receta de salmorejo. Empieza por limpiar bien tus tomates. Puedes optar por pelar la piel o simplemente dejarla, lo que prefieras. Corta los tomates en cuartos y p\u00e1salos a la batidora. Tritura hasta que se forme una salsa l\u00edquida, es decir, que los tomates est\u00e9n perfectamente triturados.  <\/p>\n\n<p>2. Coge un tamiz o colador y util\u00edzalo para tamizar las semillas peque\u00f1as y otros residuos del pur\u00e9 de tomate.  <\/p>\n\n<p>3. Corta el pan duro en trozos peque\u00f1os. Sum\u00e9rgelos en el bol de pur\u00e9 de tomate durante unos diez minutos. Al hacerlo, el pan se ablanda y, por tanto, es m\u00e1s f\u00e1cil de mezclar despu\u00e9s.<\/p>\n\n<p>4. Mientras esperas, pela los ajos y col\u00f3calos dentro de la batidora. Vierte el pur\u00e9 de tomate y el pan remojado. Sigue con la sal. Bate a velocidad moderada mientras a\u00f1ades el aceite de oliva lentamente, creando una emulsi\u00f3n. Contin\u00faa batiendo hasta obtener una mezcla suave y homog\u00e9nea. Prueba la sopa con una cuchara y comprueba si el punto de sal es el adecuado para ti, y aj\u00fastalo cuando sea necesario.<\/p>\n\n<p>5. Pasa la sopa de tomate a un recipiente con tapa herm\u00e9tica. Deja que repose en el frigor\u00edfico hasta el momento de servir.<\/p>\n\n<p>6.
