Para responder a esta pregunta, exploremos los or\u00edgenes de esta receta.<\/p>\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Historia_del_ajo_espanol_Alioli\"><\/span>Historia del ajo espa\u00f1ol Alioli<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n<p>El ajo espa\u00f1ol <meta charset=\"utf-8\"\/>alioli proviene de la salsa catalana llamada allioli. La palabra significa simplemente ajo (al) y aceite (oli.) Se hac\u00eda machacando ajo fresco y aceite de oliva con un mortero hasta formar una pasta.  <\/p>\n\n<p><em>Parece f\u00e1cil, \u00bfverdad?  <\/em><\/p>\n\n<p>\u00a1Sin embargo, esta forma tradicional de hacer allioli requiere que machaques continuamente durante unos buenos 20 minutos! Pone a prueba tanto tu fuerza como tu paciencia, mientras te abres paso con la esperanza de tener una salsa espesa, rica y cremosa al final.<\/p>\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"%C2%BFCual_es_la_diferencia_entre_el_alioli_y_el_alioli\"><\/span>\u00bfCu\u00e1l es la diferencia entre el alioli y el alioli?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n<p>T\u00e9cnicamente hablando, el alioli se refiere a la salsa hecha de ajo, aceite y yema de huevo originaria de la Provenza, Francia. Tradicionalmente, se preparaba de la misma manera que el allioli a la catalana: con el uso intensivo de mortero y mano de obra.<\/p>\n\n<p>El t\u00e9rmino alioli se ha adoptado generalmente como t\u00e9rmino ingl\u00e9s para las salsas del mismo ingrediente y proceso. Por lo tanto, cuando se dice alioli de <a href=\"https:\/\/www.spanishfoodguide.com\/es\/ingredientes-espanoles\/todo-sobre-el-ajo-recetas-espanolas-de-al-ajillo\/\" data-type=\"post\" data-id=\"895\">ajo espa\u00f1ol<\/a> no se diferencia del allioli o del alioli. Por eso, cualquier receta de alioli de ajo espa\u00f1ol <meta charset=\"utf-8\"\/>, te dir\u00e1 que seas lento al a\u00f1adir el aceite de oliva a la mezcla.<\/p>\n\n<p><em>\u00bfQu\u00e9 ocurre realmente durante este proceso?  <\/em><\/p>\n\n<p>Cient\u00edficamente hablando, est\u00e1s dispersando la grasa en el agua para que el resultado sea una mezcla homog\u00e9nea. Es como obligar a estos dos l\u00edquidos inmiscibles a combinarse. Si lo consigues, acabar\u00e1s con una salsa bien mezclada, cremosa y rica.<\/p>\n\n<p>Esto s\u00f3lo se consigue si das a la base el tiempo suficiente para absorber el aceite. Un ingrediente importante de la mezcla es lo que llamamos un emulsionante. Su funci\u00f3n es estabilizar tu salsa, y en el caso del alioli de ajo espa\u00f1ol <meta charset=\"utf-8\"\/>, el emulsionante es la yema de huevo.  <\/p>\n\n<p>\u00bfCu\u00e1les son los otros alimentos en los que est\u00e1 presente la emulsi\u00f3n?
