Limpia las anchoas frescas pas\u00e1ndolas por agua fr\u00eda. Aseg\u00farate de hacer este procedimiento r\u00e1pidamente porque las anchoas son el tipo de pescado que se deteriora r\u00e1pidamente. Para evitarlo, col\u00f3calos en un bol sobre un poco de hielo. Retira las escamas raspando hacia atr\u00e1s. Aclara antes de quitar la cabeza y las tripas. Desliza el pulgar por el vientre para sacar las tripas.
